Almonds are the edible seeds of Prunus dulcis, a small tree native to the Mediterranean and South Asia, now cultivated extensively in California, the Mediterranean region, and Central Asia. The almond is enclosed in a hard shell and produces a kernel with a pale ivory color and slightly sweet, delicate flavor. Almonds are botanically classified as drupes, with the culinary "nut" actually being the seed within the stone fruit's pit. Sweet almonds (the common culinary variety) are distinct from bitter almonds, which contain amygdalin and require processing before consumption. Varieties include Valencia, Marcona (prized for eating), and all-purpose cultivars suited to oil extraction and flour production.

Culinary Uses

Almonds are utilized across Mediterranean, Middle Eastern, and Asian cuisines in both sweet and savory applications. They are consumed raw as a snack or toasted for enhanced flavor, incorporated into marzipan and almond paste confections, or ground into flour for baking and gluten-free cooking. In savory contexts, almonds appear in Spanish romesco sauce, Middle Eastern dishes such as chicken with almond-pomegranate sauce, and Indian curries. Almond milk serves as a dairy alternative, while almond oil is prized for dressings and finishing. Sliced, slivered, and blanched forms allow versatility in texture and presentation across desserts, salads, and garnishes.
