Method

Toast the sliced almonds in a dry skillet over medium heat, stirring frequently until fragrant and lightly golden, about 2–3 minutes.

Transfer the toasted almonds to a plate and set aside. Add butter or margarine to the same skillet and melt over medium heat.

Add the cooked rice to the melted butter and stir gently to coat, breaking up any clumps, for about 1 minute.

Stir in the lemon peel, orange peel, salt, and ground white pepper until evenly distributed.

Pour the orange juice, lemon juice, and lime juice over the rice and stir gently to incorporate, cooking for 1–2 minutes to warm through.

Fold in the toasted almonds and toasted flaked coconut until well combined.

Gently fold in the orange quarters, being careful not to break them up, then transfer to a serving dish.
