tequila
Tequila contains negligible carbohydrates and no fat, with minimal nutritional value beyond its alcohol content (approximately 40% ABV). Like all spirits, it provides calories primarily from ethanol, approximately 97 calories per 1.5-ounce (44 ml) serving.
About
Tequila is a distilled spirit produced exclusively in Mexico, primarily from the blue agave plant (Agave tequila), grown in the region surrounding the city of Tequila in Jalisco. The production process involves harvesting the agave's heart (piña), roasting it to convert complex carbohydrates into fermentable sugars, extracting the juice, fermenting it with yeast, and distilling the resulting liquid. Mexican law mandates that tequila must contain at least 51% blue agave, with the remainder typically composed of other sugars. The spirit ranges in color and flavor based on aging: blanco (unaged, clear, with vegetal and peppery notes), reposado (aged 2-11 months in wood, acquiring golden hue and vanilla undertones), and añejo (aged a minimum of 1 year, deeper color and complex oak-influenced flavors).
Culinary Uses
Tequila functions both as a standalone spirit and as a key ingredient in cocktails, most notably the margarita, which combines tequila with lime juice and triple sec. Beyond cocktails, tequila features in Mexican cooking for marinades, sauces, and reductions that add complexity and heat. Blanco tequila is preferred for cocktails where its bright, agave-forward characteristics shine, while aged varieties suit sipping neat or in sophisticated mixed drinks. In the kitchen, tequila pairs well with citrus, chiles, and cinnamon, and is sometimes used to flambé dishes or deglaze pans in Mexican and Southwestern cuisine.
