About
Orange rind, also called zest or peel, is the colored outer skin of the Citrus × sinensis fruit. The rind consists of two distinct layers: the thin, aromatic outer zest containing essential oils (flavedo), and the thicker white pith (albedo) beneath it. The zest contains volatile compounds including limonene, citral, and myrcene that provide the distinctive bright, intensely citrus flavor characteristic of oranges. The pith is less aromatic but contributes a bitter, spongy texture. Orange rind varies in thickness and oil content depending on cultivar and growing conditions, with varieties like Valencia and Navel oranges producing particularly flavorful zest.
Culinary Uses
Orange rind functions as a flavoring agent across numerous culinary traditions, valued for its aromatic zest and bitter complexity. The thin zest is grated or minced to garnish desserts, infuse baking batters, steep in sauces, and flavor beverages including cocktails and tea. The whole rind or pith is candied into a confection, used to make marmalade, or steeped in syrups and liqueurs. In savory cooking, zest brightens fish dishes, glazes, and Asian stir-fries. The rind may also be dried and ground into powder for spice blends or teas. Proper removal of bitter pith ensures the clean citrus flavor without unwanted astringency.
