- onion2 tbspminced
- celery⅔ cupchopped
- margarine3 tbspmelted
- rice1 cupregular, uncooked
- orange rind2 tbspgrated
- 1 cup
- 1½ cups

Method

Heat the margarine in a large saucepan over medium heat until melted.

Add the minced onion and chopped celery to the melted margarine, stirring occasionally until softened, about 3-4 minutes.

Stir in the uncooked rice, mixing well to coat with the margarine and cook for 1-2 minutes until lightly toasted.

Add the orange juice, water, grated orange rind, salt, and thyme to the rice mixture, stirring to combine.

Bring the mixture to a boil over medium-high heat, then reduce heat to low and cover with a tight-fitting lid.

Simmer without lifting the lid for 20 minutes, or until the rice is tender and the liquid is absorbed.

Remove from heat and let stand covered for 2 minutes to allow any remaining moisture to be absorbed.
