Frozen Christmas Plum Pudding

A southern-hemisphere Christmas plum pudding - in the southern hemisphere they have a summer Christmas so they have adapted some of the more traditional festive fare to local conditions.

Combine the finely chopped mixed dried fruits, grated orange rind, and cocoa in a large mixing bowl.

Pour the brandy or masala over the dried fruit mixture and stir well to coat all ingredients evenly. Let sit for 5 minutes to allow the flavours to meld.

Dissolve the gelatine in 1 tablespoon of boiling water, stirring constantly until completely dissolved. Allow to cool for 2–3 minutes.

Gently fold the slightly softened vanilla ice cream into the dried fruit mixture in batches, stirring carefully to avoid melting the ice cream.

Pour the cooled dissolved gelatine into the ice cream mixture and fold gently until just combined, taking care not to overmix.

Transfer the mixture into a pudding mould or loaf tin, pressing down gently to eliminate air pockets. Smooth the top with the back of a spoon.

Cover the mould tightly with plastic wrap or a lid and freeze for at least 4–6 hours, or preferably overnight, until completely firm.

Remove the frozen pudding from the freezer 10 minutes before serving to allow it to soften slightly. Run a warm knife around the edges and turn out onto a chilled serving plate.

Slice into portions and serve immediately on chilled dessert plates.
