Horseradish (Armoracia rusticana) is a perennial root vegetable native to southeastern Europe, belonging to the Brassicaceae family alongside cabbage and mustard. The plant produces a thick, cream-colored taproot with rough, brownish skin and pungent white flesh that intensifies in sharpness when cut or grated. The characteristic bite comes from glucosinolates, volatile sulfur compounds released when cell walls are broken, creating a heat sensation in the nasal passages similar to that of wasabi or hot mustard. Fresh horseradish has a clean, penetrating peppery flavor with earthy undertones, while its pungency mellows considerably when cooked.

Culinary Uses

Horseradish is primarily used as a pungent condiment and flavoring agent in European and North American cuisines. In Eastern European and Ashkenazi Jewish traditions, freshly grated horseradish mixed with vinegar and beets (chrein) accompanies Passover seders and rich meat dishes, where its sharp heat cuts through fat. Ground horseradish is a standard accompaniment to roasted meats—particularly beef and pork—and smoked fish, serving both as a digestive aid and flavor complement. It appears in cocktails (Bloody Marys), sauces, and as a component in mustard blends. When cooking with horseradish, adding it near the end of preparation preserves its volatile pungency, while extended heating diminishes its signature bite.
