Sweet and Savory Rollups

Prepare your flatbread dough by combining flour, yeast, warm water, salt, and a pinch of sugar, then knead until smooth and elastic. Allow the dough to rest and rise in a warm place for about 30 minutes until slightly puffed.

While the dough rests, prepare the sweet and savory filling by mixing prepared horseradish with softened cream cheese, a drizzle of honey, and your choice of diced herbs or thin-sliced cured meats. Stir until the filling is well combined and spreadable.

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

On a lightly floured surface, roll the dough out into a large, thin rectangle approximately 12 by 16 inches. Aim for an even thickness of about one-quarter inch throughout.

Spread the horseradish filling evenly across the entire surface of the dough, leaving a one-inch border along one of the long edges to help seal the roll.

Starting from the long edge opposite the border, tightly roll the dough into a firm log, then pinch the seam closed. Use a sharp knife to slice the log into individual rounds approximately one inch thick.

Arrange the sliced rollups cut-side up on the prepared baking sheet, spacing them about two inches apart, and bake for 18 to 22 minutes until golden brown and cooked through.

Remove the rollups from the oven and allow them to cool on the baking sheet for at least five minutes before serving. Optionally drizzle with a light honey glaze for added sweetness.
