About

Hazelnuts are the edible fruits of Corylus avellana, a deciduous shrub native to southeastern Europe and western Asia, though now cultivated extensively in Turkey, Italy, Oregon, and other temperate regions. The hard-shelled drupe grows within a leafy involucre and produces a kernel rich in oil and distinctive flavor. The nuts are roughly spherical with a thin, hard brown shell containing a creamy, pale kernel. Their flavor profile is warm, slightly sweet, and subtly earthy, with an oily richness that develops further with roasting. Major commercial varieties include Barcelona, Negra, and Tonda Romana, which differ in size, shell thickness, and flavor intensity.

Hazelnuts are available both in-shell and blanched, with the latter category including roasted and raw preparations. The blanching process removes the papery skin that covers the kernel.

Culinary Uses

Hazelnuts are prized in both sweet and savory applications across European, particularly Italian and Turkish, cuisines. They are ground into hazelnut butter and paste, used extensively in chocolate confections, pralines, and gianduja, and incorporated into biscuits, cakes, and desserts. Hazelnuts also feature in savory contexts: roasted and chopped as garnishes for vegetables and salads, ground into dukkah and other spice blends, and used to prepare hazelnut oils for dressings and finishing. In Italian cuisine, hazelnuts are essential to Piedmont's pastry traditions, while Turkish and Eastern European cooking employs them in both sweet and spiced savory preparations. Roasting intensifies flavor and is recommended before grinding or incorporating into recipes.
