Black pepper (Piper nigrum) is the dried, unripe fruit of a woody climbing vine native to Kerala in southern India. The berries are harvested green, then dried in the sun for several days until they shrivel and blacken, developing a hard, wrinkled exterior. The peppercorn contains a single seed surrounded by the dried fruit wall. Black pepper exhibits a sharp, biting heat accompanied by warm, slightly piney aromatic notes, with an initial bite followed by lingering pungency on the palate.

The pungency derives from the alkaloid piperine, which accounts for 5–9% of the spice's composition. Different origins produce distinct flavor profiles: Indian Malabar pepper tends toward citrus and wood notes, Vietnamese and Indonesian varieties are typically earthier and more pungent, while Tellicherry peppercorns (from India) are prized for their size and complex flavor.

Black pepper is the most widely consumed spice globally and functions as both a primary flavoring agent and a flavor enhancer in savory and sweet preparations. It is essential to French and European cuisines, where it seasons soups, stocks, sauces, and meat dishes. In Asian traditions—particularly Chinese, Indian, and Southeast Asian cooking—black pepper appears in curries, stir-fries, and spice blends. Ground pepper is typically added at the end of cooking or at the table to preserve its volatile aromatics, while whole peppercorns are included in pickling brines, stocks, and long-braised dishes where heat extraction is desired. Pepper's heat is notably distinct from chili peppers, engaging different taste receptors and providing numbing rather than fiery sensation.
