About

Turkey (Meleagris gallopavo) is a large domesticated fowl native to Mesoamerica, now raised commercially throughout the world as a source of poultry meat. The bird is characterized by its large size, dark plumage (in heritage breeds), and distinctive wattles and snood. Wild turkeys are leaner with more pronounced flavor, while domesticated birds—particularly the Broad-Breasted White variety—are bred for maximum breast meat yield. Turkey meat is predominantly white in the breast and thighs/legs, with a mild, slightly gamey flavor that intensifies in heritage breeds. The meat is lower in fat than many other poultry and contains complete proteins with all essential amino acids.

Culinary Uses

Turkey is employed in cuisines worldwide as a versatile protein, though it holds special significance in North American and Northern European traditions. Beyond the iconic roasted whole bird served at Thanksgiving and Christmas celebrations, turkey appears in ground form for burgers, meatballs, and sausages; as deli meats and processed products; and in braises, stews, and stocks. It pairs well with sage, thyme, and other Mediterranean herbs, and takes both light preparations (poaching, steaming) and robust applications (spice rubs, braising liquids with wine or stock). Regional specialties include turkey mole in Mexican cuisine and turkey schnitzel in Central European cooking.
