Combine ground turkey, egg, salt, Italian herb blend, and cracked pepper in a mixing bowl, stirring gently until just incorporated; do not overmix.

Divide the turkey mixture into 4 equal portions and shape each into a 3-inch-wide patty, about ¾-inch thick.

Heat 1 tsp margarine in a large skillet over medium-high heat until melted and foaming.

Place turkey patties in the hot skillet and cook for 4-5 minutes per side until lightly browned and cooked through.

Reduce heat to medium and add the remaining 1 tsp margarine to the skillet.
