About

Salt is a mineral compound of sodium chloride (NaCl) obtained through evaporation of seawater, mining of rock salt deposits, or brine extraction. Pepper is the dried fruit (berry) of Piper nigrum, a flowering vine native to Kerala in South India. Black pepper is produced by harvesting unripe berries and drying them until the skin blackens; white pepper results from fermenting and removing the outer husk; and green pepper uses fresh, undried berries.

Together, salt and pepper form the foundational seasoning duo of Western cuisine, distinguished by their complementary flavor profiles: salt enhances and rounds flavors while suppressing bitterness, while pepper provides pungency and heat through the alkaloid piperine. Salt varieties include sea salt, kosher salt, and table salt; pepper comes in black, white, green, and red peppercorn varieties, each with distinct intensity and aromatic properties.

Culinary Uses

Salt and pepper are the primary seasoning pair in nearly all savory cuisines worldwide. Salt is used to enhance flavors in cooking, preserve foods, and balance sweetness and acidity.
