Slice the pastrami into thin strips or bite-sized pieces and add to the hot skillet.

Push the pastrami to the sides of the skillet and crack 4-6 eggs directly into the center of the pan.

Cook the eggs over medium heat until the whites are set but the yolks remain runny, about 4-5 minutes, or adjust to your preferred doneness.
