Salt appears as white, colorless crystals with a distinctive salty taste and is odorless.

The primary varieties used in cooking include sea salt (harvested from evaporated seawater, often containing trace minerals), table salt (refined and typically iodized with anti-caking agents), kosher salt (larger crystals with lower density, favored for seasoning and curing), fleur de sel and sel gris (hand-harvested from salt marshes with mineral complexity), and specialty salts such as Himalayan pink salt and Hawaiian black salt.
