The cream naturally separates from coconut milk when allowed to stand, with the heavier cream rising to the top.
Coconut cream is commercially available both canned and fresh, with canned varieties often stabilized with guar gum or other additives to prevent separation. Regional variations include the traditional methods of hand-pressing coconut pulp used throughout the Indian Ocean region, where production remains partly artisanal.
