Coconut cream is the thick, fatty liquid extracted from the flesh of mature coconuts (Cocos nucifera), a tropical palm species native to Southeast Asia and the Pacific islands. Obtained by pressing grated coconut flesh or by the second pressing of coconut milk, coconut cream contains a higher fat content (typically 13-20% fat) than coconut milk. It has a rich, opaque white appearance with a smooth, unctuous texture and a distinctly sweet, nutty coconut flavor. The cream naturally separates from coconut milk when allowed to stand, with the heavier cream rising to the top.

Coconut cream is commercially available both canned and fresh, with canned varieties often stabilized with guar gum or other additives to prevent separation. Regional variations include the traditional methods of hand-pressing coconut pulp used throughout the Indian Ocean region, where production remains partly artisanal.

Culinary Uses

Coconut cream serves as a fundamental ingredient in Southeast Asian, Indian, Caribbean, and Pacific island cuisines, providing richness and distinctive flavor to curries, soups, and sauces. In Thai cooking, it forms the base of massaman and panang curries, while in Indian cuisine it appears in Kerala and coastal South Indian coconut-based gravies. The ingredient is essential for desserts such as coconut custard, panna cotta, and ice cream, where its fat content creates luxurious texture. Coconut cream also features in beverages like piña coladas and tropical smoothies. It is best used directly from the can or container without extensive heating, as high temperatures can cause separation; it pairs naturally with curry spices, seafood, poultry, and vegetables.
