Heat the oil in a large saucepan over medium heat. Add the chopped onion and sauté for 2–3 minutes until softened and fragrant.

Stir in the curry powder and ginger, cooking for 1 minute to bloom the spices and release their flavors.

Add the chopped tomatoes and stir well to combine with the spiced oil. Cook for 3–4 minutes until the tomatoes begin to soften and release their juices.

Pour in approximately ½ cup of water (or enough to create a light sauce) and bring to a gentle simmer.

Add the thinly cut rape and stir to coat with the sauce. Simmer for 8–10 minutes until the greens are tender but still retain some texture.

Sprinkle in the powdered milk and stir until fully incorporated into the sauce. Taste and adjust seasoning with salt as needed.

Simmer for an additional 1–2 minutes to allow the flavors to meld, then remove from heat and serve hot.
