The fermentation process involves acetic acid bacteria (Acetobacter species) converting ethanol into acetic acid, typically resulting in a final product with 4-8% acetic acid content by volume.

The flavor profile ranges from sharp and intensely sour to subtle and complex, depending on the source material and production method. Common varieties include wine vinegar, apple cider vinegar, malt vinegar, rice vinegar, white distilled vinegar, and specialty vinegars derived from fruits, grains, or honey. Each carries distinct aromatic compounds and color characteristics reflecting its origin.

Culinary Uses

Vinegar serves as an essential souring agent and flavor enhancer across global cuisines. It is fundamental to pickling and food preservation, adds brightness to dressings and marinades, and balances rich dishes through its acidity. Specific applications include shrubs, gastrique sauces, deglazing, and as a key component in condiments such as ketchup and hot sauce.
