1
Prepare your ingredients by finely chopping the onions, mincing the garlic, and slicing the chili peppers. Set all prepped aromatics aside.

2
In a bowl, combine the vinegar, brown sugar, black pepper, and a splash of beef stock to create the seasoning marinade. Stir until the sugar is fully dissolved.
5 minutes
3
Heat oil in a large skillet or cast iron pan over medium-high heat. Sauté the minced garlic until fragrant and lightly golden, about 1-2 minutes.
3 minutes
4
Add the chopped onions and chili peppers to the pan and cook, stirring frequently, until the onions are softened and translucent.
5 minutes
5
Pour in the beef stock and bring the mixture to a gentle simmer, allowing the flavors to meld together.
5 minutes
6
Add the prepared seasoning marinade to the pan, stirring to combine everything evenly. Adjust sweetness, sourness, and heat to taste.
3 minutes
7
Increase the heat to high and cook, stirring occasionally, until most of the liquid has reduced and the mixture begins to sizzle and caramelize.

Transfer the sisig to a sizzling plate or cast iron skillet and serve immediately while hot, garnished with additional chili peppers and onions if desired.
