About

Salmon is a migratory ray-finned fish of the family Salmonidae, native to the North Atlantic and Pacific oceans and various freshwater systems. The fish is characterized by its distinctive reddish-pink to orange flesh, which derives its color from astaxanthin, a carotenoid pigment found in the microalgae and crustaceans it consumes. Salmon species include the Atlantic salmon (Salmo salar), Pacific varieties such as Chinook, Sockeye, Coho, Pink, and Chum, and farmed Atlantic salmon. The flavor profile ranges from rich and buttery (in fattier species like Chinook) to more delicate and subtle (in leaner varieties), with a characteristic mild fishiness that appeals to a broad palate.

Culinary Uses

Salmon is one of the most versatile and widely utilized fish in global cuisine, featured prominently in Nordic, Japanese, North American, and contemporary European cooking. It is commonly prepared through smoking, curing (gravlax), grilling, poaching, baking, and pan-searing. The fish is central to dishes such as sushi and sashimi, smoked lox on bagels, British kedgeree, and French bouillabaisse. Salmon's high fat content makes it forgiving to cook and allows it to pair well with acidic components (lemon, dill, capers), bold flavors (soy sauce, miso), and aromatic vegetables.
