Ricotta is a fresh whey cheese produced by heating the whey left over from the manufacture of other cheeses, particularly mozzarella or provolone, and collecting the coagulated proteins that rise to the surface. Originating in Italy (its name derives from the Italian "ricotta," meaning "recooked"), ricotta has a light, creamy texture with a mild, slightly sweet flavor. The cheese is characteristically soft, grainy, and spreadable, with higher moisture content than aged cheeses. Traditional ricotta from Southern Italy, particularly Sicily, is made from the whey of sheep's or buffalo's milk, while Northern Italian and commercial American versions typically derive from cow's milk whey. The color ranges from pure white to pale cream, and the texture can vary from loose and creamy to slightly firmer depending on production methods and moisture content.

Ricotta is sometimes enriched with whole milk or cream, producing a richer, denser product marketed as ricotta vera or whole milk ricotta. Some artisanal producers create "ricotta di bufala" from buffalo milk whey, which has a more delicate flavor and smoother texture than cow's milk versions.

Culinary Uses

Ricotta is a cornerstone ingredient in Italian cuisine and increasingly prominent in contemporary cooking. It serves as a filling for pasta dishes—most famously in ravioli, tortellini, cannelloni, and lasagna—where it is often combined with spinach, eggs, and Parmigiano-Reggiano. The cheese is essential to both savory and sweet preparations: it appears in savory appetizers like bruschetta and in desserts such as cannoli, panna cotta, and cheesecake. Beyond Italian cuisine, ricotta functions as a versatile baking ingredient, used in pancakes, muffins, and sweet tarts, and as a creamy substitute for sour cream or mascarpone in various preparations. Its mild flavor and spreadable consistency make it suitable for both savory applications—dolloped on roasted vegetables or mixed into dips—and sweet uses.
