Rhubarb (Rheum rhabarbarum) is a perennial herbaceous plant native to Central Asia, belonging to the Polygonaceae family. The large, deeply lobed leaves are toxic due to high oxalic acid content and are not consumed. Common varieties include 'Victoria,' 'Timperley Early,' and 'Champagne,' each displaying variations in color intensity and acid levels.

The most iconic pairing is rhubarb and strawberry in pies and crumbles, though it also appears in custard tarts, chutneys, and cordials. In some Scandinavian and Eastern European cuisines, stewed rhubarb is served as a dessert or breakfast accompaniment. The stalks are trimmed of leaves and prepared by peeling away tough outer fibers before chopping into manageable pieces.
