Combine the diced rhubarb and sugar in a large pot over medium-high heat. Stir occasionally until the mixture begins to boil, breaking down the rhubarb.

Once boiling, maintain a rolling boil and stir frequently to prevent sticking. Cook until the rhubarb is very soft and the mixture thickens.

Remove from heat and stir in the strawberry Jell-O powder until completely dissolved. Allow the mixture to cool slightly before ladling into sterilized jars.
