Peanut butter is a paste produced by grinding roasted peanuts (Arachis hypogaea) into a smooth or chunky consistency. While peanuts are legumes native to South America, peanut butter as a commercial product emerged in North America during the late 19th and early 20th centuries. The paste is characterized by its rich, nutty flavor and creamy texture, ranging from entirely smooth (creamy style) to studded with peanut pieces (chunky style). Commercial production involves roasting blanched peanuts, grinding them until their natural oils release, and often adding minor ingredients such as salt, sugar, and stabilizers to maintain consistency and prevent oil separation.

Peanut butter varieties differ by roasting level, fineness of grind, and added ingredients. Natural peanut butter contains only peanuts and salt, while conventional versions include emulsifiers and sweeteners. Regional variants exist, such as Spanish peanut butter (using Valencia peanuts) and African-style versions with added spices or palm oil.

Peanut butter functions as both a primary ingredient and flavor component across multiple culinary contexts. In American cuisine, it appears in sandwiches (notably paired with jelly), baked goods, and desserts such as cookies and brownies. Asian cuisines—particularly Thai, Vietnamese, and Indonesian—incorporate peanut butter or similar pastes into satay sauces, noodle dishes, and curries, where it provides richness and acts as a binding agent. The paste also serves as a protein-enriched addition to smoothies, breakfast porridges, and sauces for vegetables and meats. Peanut butter's emulsifying properties make it valuable in dressings and marinades, while its versatility allows it to bridge sweet and savory applications seamlessly.
