Method

Heat the vegetable oil in a large pan over medium heat and add the couscous, stirring constantly until the grains turn golden and release a nutty aroma, about 3-4 minutes.

Pour the water into the pan and stir well to combine with the couscous, then bring to a simmer and cook uncovered until the water is absorbed and the couscous is tender, about 10 minutes.

Add the 1/2 cup sugar and chopped pitted dates to the couscous and stir gently to distribute the dates evenly throughout.

Stir in the chopped toasted mixed nuts, combining them thoroughly with the couscous mixture.

Pour the hot milk over the couscous and nut mixture, stirring gently to ensure the milk is absorbed and the couscous becomes creamy and cohesive.

Transfer the farka to a serving dish and sprinkle with additional sugar on top according to taste preference.
