Lime peel is the outer colored skin layer of the lime fruit (Citrus aurantifolia, Citrus latifolia), a small citrus fruit native to Southeast Asia and cultivated throughout tropical and subtropical regions worldwide. The peel comprises two distinct layers: the thin, colored epidermis (zest) containing aromatic essential oils and pigments, and the thicker white pith (albedo) beneath, which is more bitter and less flavorful. Lime peel varies in thickness and color depending on variety and ripeness, ranging from pale yellow-green to deep green when fresh. The distinctive flavor is intensely aromatic, bright, and tart, with complex herbal and floral notes derived from limonene and other volatile compounds concentrated in the oil glands of the zest.

Culinary Uses

Lime peel is valued for both its zest and as candied preparations across numerous cuisines. The zest—the outermost colored portion—is grated or minced and used to brighten dishes, cocktails, and desserts, contributing aromatic complexity without the juice's acidity. In Southeast Asian and Latin American cooking, lime peel is incorporated into curries, marinades, salsas, and seafood preparations. Candied lime peel and marmalade appear in desserts, cocktails, and as garnishes. The whole peel can be dried for infusions, teas, and spice blends. Key pairing partners include chiles, cilantro, fish, and tropical fruits. Fresh lime peel should be used soon after harvesting to maximize aromatic compound retention.
