Combine fresh orange juice, fresh lemon juice, extra virgin olive oil, Barbados sugar, thawed lemon juice concentrate, and fresh lime juice in a large bowl, stirring until the sugar dissolves completely.

Add grated orange peel, grated lemon peel, grated lime peel, ground cumin, ground cinnamon, salt, and ground pepper to the citrus mixture, whisking well to incorporate all spices evenly.

Stir the chopped fresh mint leaves into the marinade until fully combined.

Place the chicken breast halves with ribs in a large shallow dish or zip-lock bag and pour the marinade over them, ensuring all pieces are well coated.

Scatter the thinly sliced red onion over and around the chicken pieces in the marinade.

Cover the dish with plastic wrap or seal the bag, then refrigerate for at least 30 minutes to allow the flavors to penetrate the chicken.

Preheat the grill or barbecue to medium-high heat (approximately 375–400°F or 190–200°C).

Remove the chicken from the marinade, reserving the liquid and red onion slices separately.

Place the chicken breasts on the hot grill, skin-side down, and cook for 7–8 minutes until the skin is golden and charred in spots.

Flip the chicken and brush generously with the reserved marinade, then cook for an additional 10–12 minutes, basting occasionally, until the internal temperature reaches 165°F (74°C) and the meat is cooked through.

Transfer the cooked chicken to a serving platter and top with the reserved red onion slices and any remaining marinade that has been warmed separately.

Rest the chicken for 3–5 minutes before serving to allow the juices to redistribute throughout the meat.
