Banana Bread VII

Preheat oven to 350°F (175°C). Grease a loaf pan with vegetable oil and set aside.

Combine all-purpose flour, baking powder, salt, ground cinnamon, and ground allspice in a large mixing bowl, whisking together until evenly distributed.

In a separate bowl, whisk together sugar and packed brown sugar until combined.

Mash the 2 large bananas until smooth, then stir in the fresh lime juice and grated lime peel into the mashed bananas.

Whisk the egg in a small bowl, then combine the egg, vegetable oil, and milk until well blended.

Pour the egg mixture into the sugars and stir until incorporated, then add the banana-lime mixture and fold together gently.

Create a well in the center of the dry ingredients and pour the wet mixture into it, folding with a spatula until just combined—do not overmix, as lumps are acceptable.

Transfer the batter to the prepared loaf pan, smoothing the top with a spatula.

Bake in the preheated 350°F oven for 50 minutes, or until a toothpick inserted into the center comes out clean or with only a few moist crumbs.
