Jalapeños are low in calories and rich in vitamin C, antioxidants, and capsaicin, the compound responsible for heat perception and associated with metabolic and anti-inflammatory properties. They also provide modest amounts of vitamins A and B6.

The jalapeño is a medium-sized chili pepper (Capsicum annuum) native to Mexico, specifically the Xalapa region of Veracruz, from which its name derives. The pepper is typically 2-3 inches long with a cylindrical shape, thick walls, and a waxy, dark green exterior that can ripen to red. Its flavor profile balances moderate heat (2,500–8,000 Scoville Heat Units) with grassy, herbaceous notes and subtle fruitiness, making it less fiery than many chili peppers yet more substantial than mild varieties.

The jalapeño is distinguished by its firm texture and accessibility to mainstream palates. As the pepper matures and is left on the plant longer, it develops deeper heat and complexity. The ripe red jalapeño offers slightly sweetness compared to its green counterpart. Common varieties include 'Early Jalapeño,' 'Tam Jalapeño,' and 'Mitla,' with breeding programs continually developing variants for yield, flavor, and heat level.

Culinary Uses

Jalapeños function as both a fresh ingredient and a preservation subject across Mexican, Tex-Mex, and increasingly global cuisines. Fresh jalapeños are sliced and eaten raw as garnishes, incorporated into salsas, ceviche, and guacamole, or roasted whole for use in rajas con queso. They are pickled (en escabeche) for extended storage and served as a condiment or taco accompaniment. Jalapeños are also stuffed with cheese and fried as chiles rellenos, blended into sauces, or added to cornbreads and appetizers. The pepper's moderate heat and substantial flavor make it suitable for incorporation into soups, stews, and marinades without overwhelming other ingredients.

Preparation methods significantly affect the final flavor: charring removes the skin and develops smoky sweetness, while leaving them raw preserves their bright, grassy character. Removing the seeds and white placenta reduces heat intensity. Jalapeños pair well with cheese, corn, lime, cilantro, and cream-based sauces.
