Timely Turkey Tostadas

- homemade chicken broth or canned reduced-sodium chicken broth¼ cup

Method

Heat a large skillet over medium-high heat. Add the lean ground turkey and cook, breaking it apart with a spoon, until it is no longer pink, about 5-7 minutes.

Add the coarsely chopped onion and minced garlic to the cooked turkey, stirring well to combine. Cook for 2-3 minutes until the onion begins to soften.

Stir in the cumin seeds, chili powder, salsa or picante sauce, and chicken broth. Simmer for 5 minutes, allowing the flavors to meld and the liquid to reduce slightly.

Fold in the coarsely chopped cilantro into the turkey mixture and remove from heat.

Warm the flour tortillas in a dry skillet or directly over a gas flame for 15-20 seconds per side until pliable.

Assemble each tostada by placing a warm tortilla on a plate and spreading the spiced turkey mixture evenly across the surface.

Top each tostada with shredded cheese, shredded lettuce, chopped tomato, and chopped fresh jalapeno pepper if desired.

Serve the tostadas immediately while the tortillas are still warm.
