Clove (Syzygium aromaticum) is the unopened flower bud of an evergreen tree native to the Maluku Islands (Indonesia), now cultivated throughout tropical regions, particularly in Madagascar, Tanzania, and India. The dried buds are small, dark brown, and nail-shaped (the name derives from the Latin clāvus, meaning nail), with a distinctive appearance featuring a rounded head and four sepals. Cloves possess an intensely aromatic, warming flavor with sweet, peppery, and slightly bitter notes, and contain high levels of eugenol, the essential oil responsible for their characteristic spicy-sweet aroma and numbing sensation on the palate. Premium clove varieties are distinguished by their high essential oil content and the prominence of the flower head relative to the stem.
The spice exhibits remarkable versatility and potency; a small quantity imparts significant flavor.
