Culinary Uses

Yellow onions are the foundation of countless savory dishes across world cuisines. They are essential to the French mirepoix (onion, celery, carrot) and soffritto (Italian) aromatic bases, and appear foundationally in stocks, soups, and stews. Raw, they provide sharp accent notes in salads, salsas, and pickles; caramelized, they develop rich umami depth suitable for French onion soup and gratins.
