Preheat the oven to 400°F (200°C).

Peel the yellow onions, leaving the root end intact to hold the layers together during roasting.

Cut each onion in half from root to tip, creating flat surfaces for even cooking.

Place the onion halves cut-side up on a baking sheet, spacing them evenly.

Drizzle the olive oil over the onion halves, coating them lightly on both the cut and rounded sides.

Season generously with salt and pepper on the exposed cut surfaces.

Roast in the preheated oven for 25-30 minutes until the onions are caramelized, tender, and golden brown on the cut surfaces.
