ProducePumpkins are harvested in autumn (September through November in the Northern Hemisphere), with peak availability from October through early December. They store well in cool conditions and remain available throughout winter, making them effectively available from fall through early spring.

Rich in beta-carotene (vitamin A), vitamin C, and potassium, with minimal calories and significant fiber content. Pumpkin seeds are particularly nutrient-dense, providing protein, magnesium, zinc, and polyunsaturated fats.

About

Pumpkin refers to the large, round winter squash of the genus Cucurbita, primarily Cucurbita pepo, native to the Americas and domesticated over 7,500 years ago. The fruit is characterized by a hard, deeply ridged orange or tan rind, fibrous orange flesh, and a central cavity containing flat, oval seeds. Pumpkins vary widely in size, from small sugar pumpkins weighing 1–2 pounds to giant varieties exceeding 100 pounds. The flavor is mild, slightly sweet, and nutty, with a texture ranging from watery to dense depending on variety and ripeness. Sugar pumpkins and pie pumpkins are preferred for culinary use due to their superior flavor and texture, while larger jack-o'-lantern varieties are more decorative.

Culinary Uses

Pumpkin is integral to autumn and winter cooking across North American, European, and Asian cuisines. It is commonly roasted, puréed, and used in sweet applications such as pies, breads, muffins, and custards, as well as in savory preparations including soups, risottos, curries, and roasted side dishes. The flesh can be steamed, sautéed, or baked; the seeds are frequently roasted as a snack or pressed for oil. Pumpkin purée serves as a base for beverages, sauces, and spice blends. The flowers and young leaves are also edible and featured in various global cuisines.
