O Bee Muay / Black Rice Porridge

Method

Rinse the glutinous rice thoroughly under cold water until the water runs clear, then drain well.

Bring water to a boil in a large pot and add the drained glutinous rice, stirring occasionally to prevent sticking.

Continue stirring and cooking until the rice breaks down and becomes creamy, approximately 40-45 minutes total, adding more water if needed to reach desired porridge consistency.

Add a pinch of salt to the porridge and stir to combine, adjusting the amount to taste.

Pour in the coconut milk and stir well until fully incorporated throughout the porridge.

Add sugar to taste and stir continuously until dissolved, then simmer for another minute to allow flavors to meld.
