Nuts & SeedsMost nuts are harvested in autumn (September–November in the Northern Hemisphere), though some regions have secondary harvests. Many nuts store well and remain available year-round; however, peak freshness occurs in fall and winter months following harvest.

Nuts are nutrient-dense foods rich in healthy unsaturated fats, protein, fiber, and essential vitamins and minerals including vitamin E, magnesium, and zinc. They provide sustained energy and are associated with cardiovascular and metabolic health benefits.

Nuts are the hard-shelled fruits of various plant species, botanically distinct from legumes despite common culinary classification. True nuts include almonds, walnuts, hazelnuts, and pistachios, while culinary "nuts" also encompass seeds such as sunflower and pumpkin seeds, as well as drupes like cashews and macadamias. They are characterized by a hard, protective shell surrounding an edible kernel rich in oils and proteins. Nuts vary widely in flavor—from the delicate sweetness of macadamias to the earthy robustness of walnuts—and in texture, ranging from buttery to dense and crunchy.

Nuts originated across diverse geographic regions: almonds from the Mediterranean and Central Asia, walnuts from eastern North America and southern Europe, cashews from tropical regions, and hazelnuts from temperate zones. Each variety has distinct botanical origins, growing conditions, and flavor profiles that influence their culinary applications.

Culinary Uses

Nuts serve multiple functions across global cuisines—as snacks, in baking and confectionery, as thickening or enriching agents in savory dishes, and as the base for nut butters and milks. They appear in Mediterranean cuisine in salads and pestos, in Middle Eastern preparations such as dukkah and halva, in Asian cuisines in stir-fries and curries, and throughout European baking traditions. Nuts are ground into flours for gluten-free baking, pressed into oils for cooking and dressings, and used whole or chopped as textural and nutritional components. Toasting nuts before use enhances their flavor complexity, while blanching removes skins for specific applications.
