Drain the mandarin orange segments thoroughly and set aside.

Combine the chopped celery, chopped chutney, flaked coconut, and chopped nuts in a large mixing bowl.

Add the drained mandarin orange segments and salt to the bowl, tossing gently to distribute evenly.

Fold the whipped heavy cream into the mixture using a spatula, being careful not to deflate the cream.

Add the cooked rice and fold gently until all ingredients are evenly combined and the mixture is light and fluffy.
