Cooking spray is an aerosol product consisting of a refined culinary oil combined with emulsifiers, lecithin, and propellant gases that are pressurized in a metal canister. The formulation allows the oil to be dispensed as a fine mist, creating a thin, even coating on cookware or baking surfaces. Common oils used in cooking sprays include canola oil, vegetable oil, olive oil, and coconut oil, though the specific composition varies by brand and type. The emulsifiers prevent separation of oil and water components, while the propellant—typically nitrogen, carbon dioxide, or hydrocarbon gases—maintains pressure for consistent dispensing.

Most commercial cooking sprays also contain minor additives such as soy lecithin (a natural emulsifier), dimethyl silicone (an anti-foaming agent), and sometimes flour or cooking starch to enhance non-stick properties. The product is designed to minimize fat usage compared to brush application or coating with solid fats while providing superior coverage and ease of application.

Culinary Uses

Cooking spray is used primarily to prevent food from adhering to cookware, baking sheets, muffin tins, and griddles during cooking or baking. It is applied to non-stick and conventional pans for sautéing, frying, and scrambling, as well as to baking surfaces before adding cakes, cookies, or bread dough. The mist application allows for uniform coating with minimal oil, making it advantageous when precise fat control is desired for health-conscious cooking. Cooking sprays are also employed to grease food itself—such as coating potatoes before roasting—or to dust the interior of slow cookers and waffle makers. Different varieties (butter-flavored, olive oil, coconut oil) allow cooks to introduce subtle flavor notes without substantially increasing fat content.
