Hot 'n' Hurried Stir-fry

- 2 cups
- (3 oz) pkg. low-fat ramen noodles1 unituncooked and crumbled
- 1 unit
- (24 oz) pkg. frozen chicken stir-fry mix (such as Contessa)1 unit
- 2 tsp
- ¼ tsp
- unsalted peanuts⅓ cupcoarsely chopped

Bring 2 cups water to a boil in a large pot or wok over high heat.

Add the crumbled ramen noodles to the boiling water and cook for 3 minutes, then drain in a colander.

Coat a large skillet or wok with cooking spray and heat over high heat until very hot, about 1 minute.

Add the frozen chicken stir-fry mix to the hot skillet and cook, stirring frequently, for 5 minutes until the vegetables begin to soften and the chicken is cooked through.

Stir in the cooked ramen noodles, sugar, and crushed red pepper, mixing well to combine all ingredients.

Cook for 1 to 2 minutes, stirring constantly, until everything is heated through and flavors are blended.
