Water chestnuts (Eleocharis dulcis) are the edible corms of an aquatic sedge native to Southeast Asia, particularly China and Southeast regions. Despite their name, they are neither nuts nor related to true chestnuts, but rather the enlarged underground stem bases of the plant. Water chestnuts have a firm, white flesh with a crisp, crunchy texture and a subtly sweet, slightly nutty flavor. They feature a dark brown papery skin and are typically round or flattened in shape. The vegetable is prized in Asian cuisines for its firm texture, which is retained even after cooking, and its mild flavor that complements other ingredients without dominating the palate.
Water chestnuts grow in wetland conditions and are harvested by hand from muddy beds. Fresh water chestnuts are distinct from their canned counterparts, which are pre-peeled, preserved in brine, and widely available year-round in international markets.
Culinary Uses
Water chestnuts are a staple ingredient in Chinese, Southeast Asian, and increasingly in Western Asian cuisine. They are commonly used in stir-fries, where their crisp texture contrasts with softer vegetables and proteins, and in dim sum preparations such as har gow (shrimp dumplings) and siu mai (pork dumplings).
