About

Sunflower seeds (Helianthus annuus) are the edible kernels and shells of the sunflower plant, native to North America and now cultivated globally as a major oilseed crop. These small, elongated seeds feature a distinctive striped gray-and-white hull with a mild, slightly nutty flavor and firm texture. The kernel contains a high percentage of oil and protein. Seeds vary in size and color depending on cultivar, with confectionery varieties bred for human consumption typically larger than oil-type cultivars used for pressing.

Sunflower seeds are categorized into two main types: confectionery sunflower seeds, bred for in-shell snacking with thicker hulls and larger kernels, and oilseed varieties, which are smaller and used for oil extraction and animal feed.

Culinary Uses

Sunflower seeds are consumed globally both as a whole snack and as a processed ingredient. In-shell seeds are roasted and salted for direct consumption, particularly popular in Eastern European, Russian, and Chinese cuisines. Hulled kernels are incorporated into baked goods, granolas, salads, and grain bowls, or ground into sunflower seed butter as a nut-free alternative. Sunflower oil extracted from pressed seeds is a primary cooking oil across many cuisines.
