Black pepper (Piper nigrum) is a flowering vine native to Kerala, India, whose unripe green berries are sun-dried until they turn dark brown and wrinkled. Grinding releases these aromatics; freshly ground pepper retains significantly more volatile compounds than pre-ground versions, which lose potency through oxidation and evaporation.
