Pinto beans (Phaseolus vulgaris) are a legume native to Mexico and Central America, now cultivated worldwide as a staple protein source. These beans are medium-sized, roughly kidney-shaped, with a mottled tan and reddish-brown coloration that gives them their name—"pinto" derives from the Spanish word for "painted." When cooked, pinto beans have a creamy texture and earthy, slightly sweet flavor. They are a versatile ingredient in both dried and canned forms, becoming soft and absorbing surrounding flavors readily. The beans contain compounds such as phytohaemagglutinin in their raw state, which are eliminated through proper cooking.

Culinary Uses

Pinto beans are fundamental to Latin American, particularly Mexican, cuisine, appearing in refried beans (frijoles refritos), bean soups, stews, and as a filling for burritos and tacos. They are also used extensively in Southwestern United States cuisine and increasingly in health-conscious cooking throughout North America and Europe. The beans can be slow-cooked with aromatics for warm, comforting dishes, mashed into a paste, or left whole in salads and grain bowls.
