These small, heart-shaped peppers typically measure 3-4 inches in length and have thin, smooth walls and deep red color when fully ripe. With a Brix rating of 8-9, pimentos possess a notably sweet, slightly fruity flavor profile with minimal heat (typically 0-200 SHU), making them distinctly different from more pungent pepper varieties. The flesh is thin and tender, containing relatively few seeds.
