Method

Melt butter or margarine in a large skillet over medium heat, about 1 minute.

Add diced green bell pepper and sliced green onions to the skillet, stirring occasionally until softened, about 2-3 minutes.

Add the cooked rice (prepared in chicken broth) to the skillet and stir to combine with the vegetables.

Fold in the diced pimentos and sliced pitted ripe olives if using, distributing them evenly throughout the rice.

Season with salt and stir well to combine all ingredients, then cook for 3-4 minutes over medium heat until the rice is heated through and flavors are blended.
