Heat the melted butter in a large skillet over medium-high heat. Season the chicken breast halves on both sides with garlic salt and celery salt.

Place the seasoned chicken in the hot skillet and cook until golden brown on both sides, approximately 5-6 minutes per side.

Remove the chicken from the skillet and set aside on a clean plate.

Add the uncooked rice to the same skillet and stir constantly for 2-3 minutes until the rice becomes slightly golden and fragrant.

Pour the boiling chicken broth into the skillet with the rice, stirring well to combine all ingredients evenly.

Return the chicken breasts to the skillet, nestling them among the rice so they are partially submerged.

Sprinkle the paprika and ground red pepper over the top of the chicken and rice mixture.

Reduce heat to low, cover the skillet tightly with a lid, and simmer for 20-25 minutes until the rice is tender and the liquid is absorbed.

Stir in the diced pimentos and sliced ripe olives, distributing them evenly throughout the rice.
