Combine the cooled rice (cooked in chicken broth), sliced celery, minced onion, sliced ripe olives, and diced pimentos in a large mixing bowl.

Pour the bottled Italian salad dressing and mayonnaise over the rice mixture and toss gently until all ingredients are evenly coated.

Taste the salad and adjust seasoning if needed, then refrigerate until ready to serve.
