Monosodium glutamate (MSG) is the sodium salt of glutamic acid, a non-essential amino acid naturally occurring in proteins. First isolated in 1908 from kombu seaweed by Japanese chemist Kikunae Ikeda, MSG is now produced primarily through bacterial fermentation of glucose or sugarcane molasses. It appears as a white crystalline powder with a savory taste (umami), distinct from the four classical tastes of sweet, salty, sour, and bitter. MSG enhances and amplifies savory flavors in foods by activating taste receptors specific to glutamates, effectively intensifying the perception of umami on the palate.

Culinary Uses

MSG is widely used across Asian cuisines—particularly Chinese, Japanese, Vietnamese, and Korean cooking—as a flavor enhancer added to soups, broths, stir-fries, sauces, and seasoning blends. It functions as a taste amplifier, allowing cooks to achieve deeper savory notes with less salt or other seasonings. In Western food manufacturing, MSG appears in processed foods, bouillons, and umami-forward condiments. The ingredient is typically dissolved in liquids or incorporated into dry spice mixtures; a small amount (0.5–1% by weight) significantly boosts savory perception without overpowering other flavors. It pairs particularly well with proteins, vegetables, and fermented ingredients.
