Hershey's Cocoa is a processed, unsweetened cocoa powder produced by The Hershey Company, a major American chocolate manufacturer headquartered in Pennsylvania. It is made by fermenting and roasting cocoa beans (Theobroma cacao), grinding them into cocoa liquor, and then pressing out most of the cocoa butter to leave a defatted cocoa solids product that is dried and ground into a fine powder. The resulting powder contains approximately 10-12% residual cocoa butter and retains the characteristic bitter, complex flavor of cacao with notes of earthiness and subtle acidity. Hershey's Cocoa is a shelf-stable product widely available in North American supermarkets and is one of the most recognizable cocoa powder brands in the United States.

The powder ranges from dark brown to nearly black in color and dissolves readily in hot or cold liquids. The non-alkalized nature of standard Hershey's Cocoa makes it particularly suitable for recipes that rely on acid-base reactions for leavening. It pairs well with butter, eggs, flour, and vanilla, and is frequently combined with sugar and cream for frostings and ganaches.
