Firm tofu is a complete plant-based protein containing all nine essential amino acids, and is also a good source of iron and calcium (especially when coagulated with calcium sulfate). It is low in calories and contains minimal saturated fat.

About

Firm tofu is a soy-based protein product originating from East Asia, particularly China and Japan, made by coagulating soy milk and pressing the resulting curds into blocks. It is manufactured by coagulating fresh soy milk with nigari (magnesium chloride), gypsum (calcium sulfate), or other coagulants, then pressing the curds under weight to remove excess moisture. The result is a dense, pale white block with a slightly springy texture and mild, neutral flavor profile. Firm tofu contains less moisture than soft or silken varieties, making it structurally stable enough to withstand cooking methods involving direct heat and significant handling. While tasteless on its own, firm tofu readily absorbs marinades and sauces, making it a versatile protein base across numerous cuisines.

Culinary Uses

Firm tofu is valued in Asian cuisines—particularly Chinese, Japanese, Korean, and Southeast Asian cooking—for its ability to maintain shape during high-heat cooking, pan-frying, and stir-frying. It is commonly cubed and added to soups, braises, and hot pots (such as mapo tofu), or cut into slabs for grilling, baking, or deep-frying. The ingredient's neutral taste allows it to pair effectively with bold seasonings like soy sauce, miso, ginger, and chili. In Western vegetarian and vegan cooking, it serves as a protein substitute in dishes ranging from scrambles to salads. Firm tofu benefits from marinating and benefits from techniques that increase browning and textural interest.
